
Apple, cinnamon and sultana overnight oats recipe – Serves 2 – generously.
Apple Compote – Make this first
2-3 diced cored and skinned sweet apples
Splash of vanilla essence
Squeeze of runny honey
Pinch of ground cinnamon
1 tablespoon of plump sultanas
Simmer together on medium heat in a frying pan until apples soften slightly. Set aside to cool. Check taste and adjust if necessary.
Overnight Oats
150g rolled oats
400ml almond milk
Splash of vanilla essence
2 tablespoons natural yoghurt
1/2 teaspoon ground cinnamon
Squeeze of runny honey
2 tablespoons of chia seeds
Mix everything together in a jug. Fill 2 mason jars with mixture. Top with the cooled apple compote. Refrigerate overnight in airtight jars for a comforting breakfast in advance.

This sounds delicious! I have an intolerance to apples and pears, but I could probably make it with canned peaches.
What kind of Apple compote? Did you mean to link to a recipe? Is it what we call applesauce in the US (pureed apples)? Or cooked/blanched and peeled apples chopped (looks like picture above)? I laughed at “plump Sultanas” I don’t think you mean the “wives of Sultans” so I looked it up, either fresh green grapes, or more likely, what we call Golden Raisins (dehydrated green grapes) in the US. Please don’t be offended by my questions. Glocalization is one of my favorite things, which is a fairly new term to most people. It means that both the local and global context of a reference matter in an internet-connected world.
Ha, thanks for the message. You could definitely use canned peaches. Warm them gently and briefly with a bay leaf and vanilla. Add a splash of brandy if you’re feeling adventurous but burn the alcohol off. Compote is literally fresh fruit warmed in it’s own juices. You want it soft but not like jam. It shouldn’t need water. It only takes about 5 minutes.
As for plump sultanas. You really made me laugh with your comment 🤣. I just meant sultanas that aren’t all shitty and dry or like bullets. Turkish sultanas are great. Orange river sultanas even better. I’m UK based. Not sure how easy they are to get in US. Raisins are fine. To, ‘plump’, them up you can always soak them in a bowl of hot water for about ten minutes to hydrate them. Then drain excess water and throw fruit into the pan. You want the texture to have some bite but also be soft and comforting. I really hope you make a peach version – sounds delicious – let me know how you get on! ❤️👍😊
