Cinnamon, Oatmeal And Raisin Cookies
250g unsalted butter at room temperature
300g soft brown sugar
3 eggs – beaten
2 teaspoons vanilla
2 generous teaspoons ground cinnamon
375 plain flour
A pinch of sea salt
1 heaped teaspoon baking soda
100g rolled porridge oats
Preheat the oven to 180/350. Line two flat baking trays with baking paper.
Switch the TV onto the Disney Channel to distract the dog. The dog is going to want to watch your every move. And you’re going to want to watch your every move every time you swear and trip over said dog.
In a small bowl sift together the flour, cinnamon, salt, baking soda.
In a larger bowl, beat the butter and sugar, then add the eggs little by little. Add the vanilla essence then add the dry ingredients. Fold in the oats and raisins at the end. Do a little dance.
Using two dessert spoons, judge the cookies dough dollops by eye and be sure to leave enough space on the trays for the cookies to spread. I usually get 6-8 cookies per tray. Eat some raw cookie dough and know that it is wrong.
Bake for 11 minutes and leave to cool slightly on baking racks. These are soft cookies which are the perfect texture for your ice cream sandwich.
For my sandwich filling, I prefer Haagen-Dazs vanilla ice cream as opposed to actual shit. If you turn the ice cream tub on it’s side and with a very sharp long knife, you can cut an inch circle slice width ways before peeling off the packaging. Genius ✨
Using a cake slice, position your ice cream circle in between two freshly baked cookies. Serve everyone you love or anyone that needs motivating. Sometimes they are the same people. Wait for the brain freeze, then buckle up for at least an hour of frenzied sugar mania. 💫
